Ingredients

4 tbsp Unsalted Butter

1/2 cup Monkfruit Natural Sugar Substitute

1/4 cup Sour Cream

1/3 cup Eggwhites

2 Large eggs

1 tsp Pure Vanilla Extract

1 tsp Baking Powder

1/2 cup Blanched Almond Flour

1 tsp Organic Psyllium Husk Powder

1 tbsp Coconut Flour
-
1/4 cup Lily`s Dark Chocolate Chips

1/4 cup Walnuts
-
1 tbsp Coconut Oil

Pre-heat oven to 375 degrees |

In a large mixing bowl Cream butter & Monk fruit |

Add sour cream & Vanilla extract and mix well |

Add Eggwhites and mix well |

Add 1 egg at a time and mix after each egg |

Add all the dry ingredients EXCEPT the dark chocolate chips and walnuts and mix well |

The mixture should look thick enough to stick to a spoon but we're not looking for a dough either. More like the consistency of oatmeal. |

Add the chocolate chips & Walnuts and mix gently until they are well incorporated evenly into the mixture |

Spray a non stick muffin pan with coconut oil or use the 1 tbsp of coconut oil and dip a brush a non stick pan or you can use muffin cups |

Put about a heaping tablespoon full of the mixture in each muffin spot and use the back of the spoon to even out the mixture |

If you want you can add some additional dark chocolate chips on top as well as walnuts just make sure you count them when you're doing your journaling. Put the muffins in the oven for 18-21 minutes checking on the color. |
