2 Large eggs
1 tbsp Cream Cheese softened in microwave for a few seconds
3 tbsp Blanched Almond Flour
2 tsp Baking Powder
2 tsp Organic Psyllium Husk Powder
3 tbsp Monkfruit Natural Sugar Substitute
1 tsp Cinnamon
1 tsp Banana Extract
1 tsp Pure Vanilla Extract
3/4 cup Mozzarella, Shredded
1 tbsp Lily`s Dark Chocolate Chips OPTIONAL
1/2 tbsp Heavy Whipping Cream OPTIONAL
1/4 cup Mixed Berries OPTIONAL

Best Banana Cinnamon Waffles with drizzled dark chocolate

I got a request to work on a waffle recipe to help with constipation issues. I'm trying to improve on the waffle / pancake recipes and I adjusted this one to fit the person that likes that fluffy soft waffle but then it turns into a more ridged standard waffle. Best of both worlds plus it has psyllium husk for help with constipation if you are having those issues.

Put all the ingredients together starting with the eggs in a blender except the mozzarella cheese, and leave OPTIONAL ingredients to the side as well (I use this blender to mix everything https://amzn.to/3cHfTG7 but you can also use this as well https://amzn.to/2PVntU0 ). Blend well!


Remove the blades from the blender and inside that container add the mozzarella cheese and mix well.


Spray your Waffle iron (I use this one https://amzn.to/2IrszTE) with coconut oil or olive oil


Add 1 tablespoon of the mixture in the middle of the waffle maker (it will not cover the whole bottom that's ok it will expand). Close and cook for approximately 3 minutes or until the steam disappears.


Optional, using a ramekin (these are the ones that I use https://amzn.to/2TMOZEd ) put in dark chocolate chips and Heavy Whipping cream in the microwave for about 15 seconds. Mix well with a fork until it's nice and smooth. It will look like liquid chocolate. You can poor this on top of your waffles and add some mixed berries like I did in the pictures! ENJOY!
