- 1 Banana
- 2 Large eggs
- 1 tbsp Coconut Oil
Mash banana in a cup then add the 2 eggs and mix well it will look like soup (make sure the bananas dont have alot of lumps on them the less the better)
Heat pan on medium heat and add coconut oil to coat the pan. Immediately put in 1-2 tbsp of batter on the hot pan you should hear the sizzle.
Cook for 1 minute on each side ( to flip the pancakes be really easy with them, more of a slow motion than a fast flip) If you need to you can reflip to cook the other side for an additional 1 minute on each side.
Great add-ins: You can add walnuts, sugar free syrup, cinnamon, monk fruit , berries and so much more. These are a fantastic base to a great pancake and fantastic on their own as well. Enjoy!
