Ingredients

4 pieces Trader Joe's Turkey Meatballs (frozen)

1 1/2 cups Spinach

1 oz chopped Onion

1 cup in pieces Zucchini, Raw

2 tsp Coconut Oil

1 tbsp grated / 6 tbsp shredded for a total of 7 tbsp Parmesan Cheese

3/4 cups Hunt's Tomato Sauce

1 1/2 tsp Spices - Garlic Powder

2 tbsp Italian Spices

1/4 tsp (you may omit if you prefer not spicy) Cayenne pepper

1 tsp (more to taste) Himalayan Salt

1/2 tsp (more to taste) Ground Pepper

2 Large eggs

Pre-heat oven to 350 degrees |

In a skillet saute onions in coconut oil for about 60 seconds |

Put your frozen meatballs in the microwave for the time listed on package |

Add tomato sauce to skillet as well as 1 tbsp of grated Parmesan cheese, mix well |

Carefully remove meatballs from microwave and cut them into at least 4 pieces each and add them to the skillet with the spinach, mix and set aside off the flame for about 5 minutes |

In a large bowl crack 2 eggs and scramble them then pour in the spinach mixture and meatball pieces and mix well, immediately put in a pan and even mixture out. |

Put in the oven and bake on 350 degrees for 15 minutes |

Remove from the oven and evenly sprinkle the shredded Parmesan cheese and put back in the oven for 5 - 7 min until melted and golden. |
