- 2-3 tbsp Unsalted Butter
- 1/2 cup Mushrooms Chopped Fresh
- 1/4 cup Scallions
- 1/2 cup Spinach
- 1 cup Hemp Hearts
- 1/2 cup Chicken Broth (or veggie broth)
- pinch Sea Salt
- pinch Ground Black Pepper
- 1 tbsp Nutritional Yeast
Frying pan melt some butter (2-3 tbsp) (for flavor and it makes them more rice like - but you can skip if you want).
Add chopped mushrooms, scallions and spinach and saute in the butter, stir often until mushrooms are soft
Add hemp seeds, broth and sea salt and pepper.
Mix and turn heat med low. Test for consistency it should take around 5-7 min.
Add 1 tbsp of Nutritional Yeast (or more for a cheesier flavor; please note this is a strong flavor for some so add small quantities at a time and keep testing)
Serve with a sprinkle of scallions on top
