Put all the ingredients together starting with the eggs in a blender except the mozzarella cheese, and leave OPTIONAL ingredients to the side as well (I use this blender to mix everything https://amzn.to/3cHfTG7 but you can also use this as well https://amzn.to/2PVntU0 ). Blend well!
Remove the blades from the blender and inside that container add the mozzarella cheese and mix well.
Add 1 tablespoon of the mixture in the middle of the waffle maker (it will not cover the whole bottom that's ok it will expand). Close and cook for approximately 3 minutes or until the steam disappears.
Optional, using a ramekin (these are the ones that I use https://amzn.to/2TMOZEd ) put in dark chocolate chips and Heavy Whipping cream in the microwave for about 15 seconds. Mix well with a fork until it's nice and smooth. It will look like liquid chocolate. You can poor this on top of your waffles and add some mixed berries like I did in the pictures! ENJOY! Let me know your variations.
