3/4 cup COLD Water
1 tbsp (see step 7) Powdered Erythritol Sweetener

My friend Yajahyra from Sugamama Dulces Enchilados, wanted her clients of to enjoy her amazing gummy bears but her customers wanted a lower carb version. Here is the lower carb version I created for her.

Steps

Done

Place grass-fed gelatin powder in a bowl with cold water and allow to bloom

Add mixed berries and 1/2 of the powdered Erythritol in blender and mix well.

Pour into a muslin cloth and squeeze out the juice. Put the pith aside to make a different dessert.

Pour 1/2 the juice into a pan and heat on low heat.

Add the bloomed gelatin and mix until it dissolves.

Remove from the heat and add the rest of the juice. Doing this will ensure the gummies keep their color.

Skim off any foam with a spoon and do a taste test for sweetness add more powdered erythritol 1/2 tsp a a time preferably till desired sweetness.

Place in desired molds and put in refrigerator for about 2 hours or more to set.
